Homemade Raspberry Rolls





I'm making raspberry rollups...
For the dough you need:
 1  1/8 cup of warm milk (temp. between 110 to 135 degrees)
1/4 cup of sugar
3 tsp of instant yeast
1 1/4 stick of butter
2 eggs
4 cups of flour
1/2 tsp of salt

For the filling:
About 3 cups of fresh raspberries
1/2 cup of sugar
1 cup of mama's homemade raspberry jam.. (store jam should be good too)

For icing:
4 tblsp of butter
2 cups of powder sugar
1/2 tsp of vanilla exract
6 tsp of warm water

Combine the milk and sugar together. add the yeast and let stand until activated.. About 10 mins.
meanwhile completely melt the butter and whisk the eggs together.
In another bowl combine the flour and salt together
add the yeast and milk mixture to the egg mixture and using the electric mixer on the lowest set. Add the flour mixture a half a cup at a time until completely mixed.
Heat oven on a very low temp. 200 degrees or so.
Spray the inside of a medal bowl with cooking spray and transfer the dough into the bowl. Then damp a cloth and place it over the bowl with the dough. Turn off the oven and place the bowl inside to let the dough raise for about an hour or two.
Meanwhile add the sugar to the raspberries to sweeten them a bit.
After the dough raise about double the size, put it on a large cutting board dusted with flour and pull it out until the dough is about 1/4 inch in thickness...
Cut the dough in half so there are two rolls and spread the jam on each half. spread the raspberries over the jam..

Roll the dough like a cinnamin roll and put on a cookie sheet wrap with plastic wrap and put in the freezer for about 15 mins to stiffen it. I'll make it easier to cut.
Preheat the oven to 350 degrees
Cut into about 1 to 2 inches rolls and put in a cake pan lined with parchment paper.
Bake for 20 to 30 mins or until they are golden brown.
Mix all the ingredients for the icing together.
Once done add the icing to the rolls before they completely cool. And enjoy..
